What wine would be good with portabella mushrooms stuffed with ricotta cheese and spinach?

they are stuffed with ricotta and parmesan cheese and diced spinach and kalamata olives. What would be a good wine to pair with that?|||There is no one wine that goes great with all the ingredients, so you need to decide which part you really want to bring out (or what else you'll be having the wine with).





Pinot Noir is THE classic pairing with mushrooms (a not-too-fruity Pinot), but because of the salty cheeses and olives, I think Champagne might be the perfect pairing.|||Personally, I would pair a dry red wine with that, like a Chianti. I would avoid a sweet wine, as I would find the salty, pungent flavor of the cheese and olives to be jarring with a sweet drink.





However, the best advice I ever got about pairing wines was from a vintner in California. She said, "Drink whatever you like--don't let wine snobs tell you what 'should' or shouldn't go with food." So if you prefer sweet wines, go ahead and enjoy yourself!|||cheese pasta and veggies must be pared with a medium to light red wine.


i would suggest a white merlot, something cooler than room temp is good.


but a good chianti slightly chilled is good too.





but with what you have and whatever you want to drink........please dont get a 1 gallon box wine ............bleech.....lol|||A soft, fruity, crisp wine would go well. If you like white wine, try a Sauvignon Blanc. If you like a red wine, try a Pinot Noir.
